Bars in Nanjing tend to have poor service and less than sterling business ethics so beware when purchasing a drink that the waiter may be quoting you a higher price. Always look at the menu to confirm the price.
If you are headed out for a night on the town, you may likely be headed to an area known as 1912 (Taiping Rd. x Changjiang Rd.). This area is Nanjing's answer to Shanghai's Xintiandi. It's a little pricier than other places in general but also a lot nicer and it encompasses at least 40% of all the bars, so if you're out tonight stop by 1912.
